Tasting note
A small parcel of Shiraz from 650 metres in the Kedros mountains of Crete, where the southern light meets the cool of the range. Hand-picked, wild-fermented on its native yeasts, lightly sulphured at bottling. Nothing added, nothing taken away — a record of the 2025 season, caught at its moment. Plum and dark cherry on the nose, soft tannin, a clean finish.
Site
Kedros sits inland from the south coast of Crete, the highest range in Rethymno. At 650 metres the days warm slowly and the nights stay cold — Shiraz hangs long and keeps its acid. The soils are stony, the slope steep, the wind constant.
Process
Picked by hand in the cool of early morning. Destemmed, lightly crushed, fermented on the skins for nine days with the yeast that lives on the fruit. Pressed gently. Two rackings through autumn. Bottled in May 2026 with seventeen parts per million of sulphites. No fining, no filtration, no cold stabilisation.
